Wooden planes are what all our ancestors flew on, starting from primitive people, until full-fledged planes made of newer materials appeared. Of course, this is a joke, and there were no wooden planes. Or more precisely, the fuselages were sometimes made of wood, but the engines themselves were quite metallic. Therefore, the Wooden Plane mod offers you what would be unrealistic in real life: flying devices made of wood will appear in Minecraft.
